Walnut Pistachio Date Crust Recipe
In a Vitamix blender, combine 1/2 cup of walnuts with 1/2 cup of pistachios and 1/2 cup of pitted dates. Add 1/2 tsp cinnamon, 1/2 tsp cardamom powder, 1 tsp of vanilla, and a pinch of Himalayan salt. Blend together and then transfer to a pie dish and spread it out in to a pie crust shape. Refrigerate for 1/2 hour or until ready to pour the filling into it.
Raw Cacao Avocado Mousse Filling
In a vitamix blender, blend until smooth: 4 large avocados, 1/2 cup of raw cacao powder, 1 tsp vanilla, 1/2 cup of pre soaked dates, pinch of Himalayan salt, 1-2 tbs of maple syrup if needed for extra sweetness, 1/4-1/2 cup of plant based milk.
Pour filling over pie crust. Decorate with fresh berries and pistachios and allow to chill in fridge for a couple of hours before serving.
